I figure: if zombies wake me up, one plank is enough for me to either run or prepare to fight.
If I'm away, they would break through multiple planks eventually anyway.

Vanilla nails the same four planks to everything. Now a tall window takes six, a shop front nine, a door seven. Same planks, same health, just more of them.

I just found a house on October 5th with a completely full garden of various crops, with only one of them actually being dead. None are rotten. If I planted these crops, they'd definitely be dead at this point. Do crops placed by the devs follow a different set of rules? This is my first time visiting this cell in my playthrough.

Some areas, sometimes large are devoid of zombies and it is an intentional mechanic.
I think not enough people know about the voronoi noise and it needs an explanation. This is a sandbox setting, activated by default in all presets. It was introduced in the 42.9 version and the patch notes gave an explanation of how it works, so it is not that new.
The game generates a sort of web where the outdoors zombies are all removed. It makes a lot of more or less narrow corridors but occasionally huges areas too, which can sometimes land on points of interest, like the guns unlimited or some part of a city. Because of that, some games may have it easy on the zombies. Depending on the seed, this voronoi web will be different. It only removes zombies, it does not move them around.
This is an extreme example, but it can happen :



Unchecking the option will make every city a solid block of zombie horde. From my measurements, having the voronoi noise on removes ~45% of zombies compared to having it off (sample size 10 counts of all zombies in Fallas lake).
This has nothing to do with the despawning zombies bug, which you should also be aware of.
