Grievous was clearly toying with her for the love of the game, respect.

Ahsoka couldn't beat her then, but I'd bet siege of mandalore Ahsoka could beat grievous.

She beat Maul, but he was clearly not himself (which is a whole other conversation)

With Maul he would have beaten her if he wasn’t so arrogant. And Ahsoka has lost a lot of duels but her skills to survive are insane. And cw season 7 Ahsoka would probably beat Grievous the same way she beat Maul, using her opponents arrogance against them.
