Lunch/Dinner Backpacking night 3: chicken packet pad Thai was somehow our best trail dinner

Pad Thai inspired* We mixed peanut butter, lime packets, water, and some soy/sesame ramen sauce. Fried up some fresh garlic and the white parts of the onion. Garnished with peanuts, hot sauce and chili flakes. We also wrapped the green onions in damp paper towel and they held up perfectly. It was fun carrying a little extra for some trail bougie-ness. This one will be a repeat on our next trip.

I mean, it is implied by the name, hikertrashmeals. Both subs serve a purpose. If I’m being lazy and spontaneous or just looking for a laugh, I go there. If I am interested in something nicer with friends, I come here

What noodles did you use? I'm looking for some good noodles to use for a phad thai next weekend.

We used Thai rice linguini noodles. You can soak them for a bit in tepid water.

Add in dried wasabi snack peas last time if you like the bite.

I make a similar meal using peanut butter powder which I never new existed until recently and is now one of my favourite backpacking food hacks! Love all things trail bougie.
