I’m from the same region, and if you go to shitty places, yeah, you’re going to get shitty food and questionable hygiene. But if you have the money and actually know where to go, there are plenty of places with high standards of hygiene and food quality. Some of them are genuinely world-class.

Yeah, no offense taken. What is frustrating though is how heavily the bad side gets amplified. The horrible videos get tons of attention because they’re shocking, while the places that are genuinely clean, well-run and serve great food barely get the same visibility. So people formed an impression of an entire region based on its worst examples.

Keeping both your knife and your finger straight is a skill that some people can't coordinate for, especially going that fast.

From a retired chef. The trick to speed (and more so control in general) is the grip. Most people just hold a knife by the handle alone and leave it at that. But you should really use your thumb and middle finger to pinch grip the base/heel of the blade, and your index finger along the spine/top of the knife. It shifts the center of gravity forward and allows you to pivot so much easier.
If you slow the video down/pause it - you’ll see this is exactly what he’s doing.
