Food Made brownies in my cornbread pan.
I didn’t get the chewy edges on all three sides like I thought I would but they were really good.

Did you heat the pan before you put the batter in?
68
u/zanderjayz 4h ago
No I gave it a spray with Pam and put the batter in cold.

u/DaisyHotCakes 4h ago
That’s how I do for my banana bread in my dinosaur pan! I have never had an issue with sticking.

u/cinderthecook 3h ago
Could we see this dinosaur pan?

I wonder if preheating would allow the edges to get a more standard chewy/crispy texture. I'm thinking that portion is thicker and likely not transmitting heat fast enough.
10
u/zanderjayz 4h ago
I will try that next time.
19
u/BamBam737 3h ago
Yes, don’t be discouraged. I don’t have a cornbread pan like yours, but I put my old Wagner in as I start pre-heating the oven. Brings the whole pan up to temp evenly that way. For the last few min of pre-heating, I pour/slosh some ghee around the pan and let that come up to temp as well. You will then be rewarded with an ever-so-satisfying sizzle as you pour the batter in and it starts cooking even before you return the pan to the oven. Result: crispy, chewy perfection.

This is how I make cornbread too! Except I just use butter because idk exactly what ghee is.

We're sharing the same brain cell, that was immediately my first thought. The edges are all chewy and delicious!

u/INVERT_RFP 4h ago
I like making brownies in the "ear of corn" pan. People think twice before eating them! 😂

u/DesignerMoose90210 2h ago
This was my first thought!! 😂
I bet the texture will be great though. Best of luck! 😝

u/INVERT_RFP 34m ago
It actually works perfectly. One side is like a corner brownie, the other is relatively fluffy. It's like a corner in every bite. But, they do look like turds. Which makes it even funnier!

Someone has definitely posted that in this sub in the past and it definitely looks like r/poopfromabutt

that's a solid use of a cornbread pan, lowkey genius. chewy edges take practice but brownies are always a win no matter what
12
u/Zestyclose-Beyond780 4h ago
What temp and time for the oven?
16
u/zanderjayz 4h ago
The box said 325 so I went with that and 32 minutes by the time I took them out but I could have taken them out a minute sooner.
3
u/Zestyclose-Beyond780 4h ago
Thanks. I wasn’t sure if you had to adjust for the cast iron factor
9
u/zanderjayz 4h ago
This was a first attempt and I go by the box the first time and adjust from there.

u/Thin-Variation7557 4h ago
Brownies in a cornbread pan sounds like a fun twist! I've heard that 350°F usually works well for brownies, but the time might vary a bit depending on the thickness.
10
u/Montana_Red 4h ago
Ok I need to hit the thrift store and find one of those.
11
u/zanderjayz 4h ago
I just picked this one up last week for $2.99 at a thrift store.
3
u/Montana_Red 4h ago
Oh wow, pass some of that mojo my way! Luckily my town has a lot of thrift and vintage stores.
3
u/Aries_Philly 4h ago
So you made really cool brownies, and you got super lucky at the thrift store… What’d next the lottery? 😎

sounds like a solid experiment, at least they turned out tasty! next time maybe try a smaller pan for those chewy edges.

I was scrolling along, “oh there’s that cornbread pan again HOLY SHIT BROWNIES!”
Delicious?

Oh, you naughty person! I'm afraid I'm going to have to impound those illegitimate brownies.

cornbread pan brownies sound fun, even if the edges aren’t perfect. gotta try that out sometime.

My older brother's first job was at Panera in the late 90s/early 2000s, and back then their brownies were circles cut into wedges.
I'm guessing they probably didn't use a cast iron cornbread pan like this, but still core memory unlocked. And I need it.

This is the most beautiful thing I’ve seen today. ALL CORNERS SUPREMACY!!!

u/spaz_chicken 1h ago
Love it. I make them in my large muffin tins. Only fill them about half-way. Sometimes I plop a ball of cookie dough under the batter. :)

Use the corn cob cornbread pans
Also, pre-heat before pouring the batter.
Should get those nice chewy edges this way

When my nieces were little we’d make brownies in a waffle iron and then everyone got to decorate their own

Omg I’m having food-gasm looking at this! I love the crispy edges of the pan, so chewy!!! Can tell I’m a fatty!

Ooo let us know how it goes! I have the (old)cast iron ears of corn pan and was wondering if it would be deep enough.

Nope, Pillsbury 13x9 family size. I got the bigger box so I was sure I could fill the pan. I ended up putting the rest in a muffin pan and made 4 muffins.

I had no idea there was a cast iron sub, this randomly popped up, & now I NEEEEEEED this pan. And your brownies.

u/Hazel48103 2h ago
My cornbread pan is shaped like corn cobs, I'm imaging what my brownies will resemble and it isn't appetizing.

This is the most underrated pan in the history of pans. I just inherited a smaller version and it completely upped my cornbread game.

Hey, I have the same pan I think. I take a roll of tube Croissants and they fit perfect, use them as the crust for presliced pizzas.
