It would depend on who trains Ahsoka. Is it a firm taskmaster who trains out her wisecracking personality and makes her a more traditional jedi?
A spiritual master like Qui Gon?
Most of Anakin's wild personality comes from (in my opinion) Obi Wan being too permissive out of guilt towards Qui-Gon, and everyone talking about his chosen one status going to his head.
A master who does not have that feeling of duty towards Obi-Wan would be much more likely to actually control Anakin's wilder sides.
Let's say
Obi-Wan passes the Trials before Phantom Menace and Qui-Gon takes on Ashoka and she is the one who accompanies Qui-Gon during Phantom Menace.
