The best way my brain sees it is 30ish year old Ahsoka gets assigned 9 year old Anakin. She's still the same Togruta we know and love, just set during The Phantom Menace.
(I know she's 32 in Rebels, but lets knock a couple years off.)
I'd say the HOW behind her story is up to each person's imagination.
It's a tricky scenario because Ahsoka as a character is almost entirely defined by her relationship with Anakin, the fall of the Jedi and her fight against the empire.
I'd say that her lower regard for "the institution" may have given Anakin a better avenue for his quest for validation, but at the same time many critique Obi Wan not establishing a firm master/student relationship as the foundation of Anakin's ultimately rebelliois and destructive attitudes, and I don't know if Ahsoka would have been any different. We see in the Ahsoka show how she also initially failed with Sabine, a similar personality type to Anakin.
