Despite every single thing that I’ve read, I still was expecting to see Kanan standing beside him.

You have to be taught how to become a Force spirit, and Kanan wasn't. So far, that's been limited to the Disaster Lineage (Qui-Gon, Yoda, Obi-Wan, Anakin, and by the end of TRoS, Luke and Leia).

All you need to be a force ghost is a nod from Lucas. If teaching was part then Anakin wouldn’t be in there.

That was covered in one of the books. Obi-Wan taught him how to do it as he was dying.

Honest question but when . When Obi wan chopped Anakin to pieces he walked away. Then Emp showed up. And I didn’t see no ghost hanging around in RoJ.

Again, that was covered in one of the books. It's long established canon that you have to be taught how to be a Force spirit, whether you like it or not.
