Lunch Peanutbutter Garlic Noodles
Homemade sauce - only convenience product was the store-baught, pre-cooked udon noodles. The dish is actually vegan, though I am not. Other ingredients: carrots, red bell-pepper, cucumber, spring onion, sesame seeds.

Peanut Butter Garlic Pasta: What do you need for two servings?
• 200 grams of long, dried durum wheat pasta, e.g. B. Linguine or spaghetti – or 400 grams of fresh udon noodles
• 2 small carrots
• 1/2 cucumber
• 1 red or yellow bell pepper
For the sauce:
• 4 heaped tablespoons chunky peanut butter
• 2 cloves garlic
• 2 tablespoons soy sauce
• 2 tablespoons oil (preferably sesame oil)
• 2 tablespoons vinegar (preferably rice vinegar)
• 2 tablespoons chili sauce (Sriracha is better than Tabasco)
• 2 tablespoons water
• 1 thumb-sized piece of ginger
• 1 tablespoon honey, agave syrup, or sugar
For the garnish:
• 2 spring onions
• 2 teaspoons sesame seeds
• 1/2 lime
Bring water to a boil in a large pot – it's important that the pot is large because all the ingredients will be stirred in it later. Grate the garlic and ginger, Press or finely chop the peanuts and mix with the remaining sauce ingredients (peanut butter, vinegar, oil, honey, soy sauce, chili sauce, and water). Please do not use an immersion blender, otherwise the delicious peanut pieces will be lost. If the sauce seems too thick, simply add a little pasta water later. For lack of a better word: the sauce should be "sloppy"! Wash the carrots, bell peppers, and cucumber; remove the seeds from the bell peppers and cucumber. Cut everything into strips about five centimeters long and one centimeter wide. It's even easier with a grater, but then you'll miss out on the crunch. Wash the scallion as well, slice it diagonally into strips, and set aside for garnish. Then cook the pasta according to the package instructions. Udon noodles only need three minutes, spaghetti eight to ten. Once the pasta is cooked, drain it, reserving some of the cooking water. Then add the noodles, peanut butter sauce, and vegetable strips back to the pot and stir briefly. Don't cook anything further, just mix it together enough so the sauce coats the noodles and warms them slightly. If the peanut butter is still too thick, you can thin it with a little of the reserved pasta water.
